My cooking philosophy is simple: tasty, wholesome foods that are full of flavour, easy to prepare and are good for your body.
I am passionate about helping people create food you can enjoy without triggering an autoimmune issue.
However, thinking about eliminating the one thing that you know causes a flare up and replacing it with store-bought products which have the glossy colourful branding have very little nutritional value and are highly processed.
Food companies are not concerned about our health, they are there to sell a product and make a profit.
Simply avoiding certain foods to merely maintain health, or dodge a reaction, isn’t enough.
Let’s take it one step further and embrace foods that heal the body from past imbalances, and then move towards supporting our long-term, optimal health.
Being 100% dairy-free and 100% grain-free also means being 100% gluten free. It means less sugars overall and zero processed sugars.
It’s about including animal fats and unprocessed oils like olive and coconut oil.
It’s healthy eating, made easy.
This book is a collection of day-to-day recipes that I have designed to be easy, with fewer ingredients, using simple methods, and no need for even a set of scales.
I recommend using the best quality produce available, using
grass-fed meat and wild-caught fish wherever possible.
For those who are new to eating grain-free and dairy-free, you may be introduced to some unfamiliar ingredients (like, almond meal and coconut flour) but once you start using them, you’ll find they not only become a pantry staple, but also welcome on the palate.
